How to Maintain Carbon Steel Knives and Avoid Rust

Oiling

Oil the blade whenever the knife will not be used for more than a day or two. I recommend food grade mineral oil, but any food-safe oil or wax will work. Beeswax and mineral oil mixes made for cutting boards are excellent for preserving the handle.

Rust Removal

Found rust on your knife? If you catch it early, don’t worry! A kitchen scrubby can usually remove it without issue. If it’s a more serious case, you can also gently rub the blade with baking soda, Bar Keeper’s Friend, or even some 1000 grit sandpaper. Use a gentle touch so you aren’t taking off all the patina you’ve developed.

Natural Patina

Carbon steel, when left unfinished, will eventually develop a patina that darkens the metal. This patina will help prevent rust. Acidic foods like tomatoes and apples will quickly darken an unfinished blade, adding a one-of-a-kind appearance.
